It’s also the time of year for basil! I love pairing stone fruits with basil as a substitute for mint. My bestie is allergic to mint, so I do a lot of substitutions. Peaches and tomatoes are wonderful together! And even better with basil! Grab a bit of each from Ms. Eva and Loy, and put this simple, but flavorful salad together! Ingredients 1 (10 oz.) cherry tomatoes, halved or quartered or 2 large tomatoes, cubed 2 peaches, cubed 4 ounces fresh mozzarella cheese, cubed 1/2 cup fresh basil leaves, (I used about 25 small leaves), torn 2 tablespoons extra virgin olive oil 1 tablespoon balsamic vinegar, (or balsamic glaze) Salt and pepper to taste Instructions In a medium bowl, toss together the cut up tomatoes, peaches, mozzarella, and basil leaves. Add olive oil to bowl, and lightly toss together. Drizzle the balsamic vinegar over the top of salad. I prefer my crock pot because it doesn’t heat up my house! 1 large (1¼ lbs) eggplant, cut into ⅓-inch cubes Salt 6 tablespoons extra virgin olive oil, plus more for serving 2 medium zucchini (about 1 lb), cut into ⅓-inch cubes 1 medium yellow onion, finely chopped 1 red, orange or yellow bell pepper, cut into ¼-inch dice 5 large cloves garlic, chopped 5 large vine-ripened tomatoes (1¾ lbs), cut into ⅓-inch cubes, with their juices 2 teaspoons fresh chopped thyme, plus more for serving ¼ teaspoon crushed red pepper flakes (optional) 3 tablespoons chopped fresh basil In a Dutch oven on medium heat, soften the onions and add all your seasonings, add in your other vegetables and let simmer, adjust your salt and pepper and add in your fresh herbs and let simmer until desired thickness. I like mine a bit soupy, so I add in about a cup of stock if I have it on hand, but you don’t have to. Serve with bread or top with cheese you like. Grease an 9x13-inch (2 quart) baking dish with cooking spray. Melt 3 tablespoons of the butter in a large skillet over medium-high. It's really broccoli cheese soup, but if calling it alien soup helps them eat it, I'm all for that. 4 heads broccoli, cut into 1-inch pieces Olive oil, for drizzling Salt, pepper, and garlic powder to taste 1 stick (4 ounces) unsalted butter 1 whole onion, diced 1 block cream cheese Pinch nutmeg 3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.), plus more for garnish 4 cups broth Chop onion and sauté for 5 minutes on med-high heat. Add stock, broccoli, and seasonings to the pot, bring to a boil and let the broccoli get soft, about 5 minutes. Transfer to a blender (be careful! It’s really hot) with the block of cream cheese, or use a stick blender in the pot. Blend until the cream cheese is smooth. Heat the oil in a large skillet over medium heat. Add your diced sweet potato to the pan. As well as possible, keep the diced sweet potato all in one layer to promote even cooking and browning. 2. After the sweet potato begins to brown, toss in the rest of the ingredients and the spices. Mix well and allow to cook on medium heat, stirring and tossing regularly for about 20-25 minutes or until all the vegetables are cooked. I also covered the pan occasionally, for a few minutes at a time, to allow the steam to help soften the collard greens. 3. Once the veggies are cooked through, add more salt, pepper or spice to taste. Remove from heat. Transfer to a serving dish or take a scoop straight to your plate. 4. I have been waiting for collards! Say what you will about all the other greens, but to me collards are where it’s at. They are a sturdy leafy green that is full of all the good-for-you stuff! I love them in a soup with andouille sausage and thickened with cornmeal, I love them as a side with pepper vinegar, I love them raw in a salad. This recipe is just a simple way to prepare them, it calls for taking out the rib, and I suggest cutting those up and sauteeing with the garlic before adding in the strips of the greens for a no-waste way to cook them. We are more than the non-profit name. NHFC was founded by community members for the community. Our mission is to provide and maintain a market that the community asked for. Napier Heights is a community that experiences food apartheid. This is a term I prefer to use rather than food desert, as desert brings to mind something that happens naturally. Food apartheid lets us know right up front that this is not a natural occurrence, this happened because of systemic oppression of a community. Addressing food apartheid is more than just getting “healthy food” to a community.
